Chia Buddin with Pumpkin- Healthy Dessert

Chia Buddin DessertTis the Season of the “Land of the Sweets” It seems that no matter where you go the tempting Deserts are out. Are you trying to maintain, behave, refrain this holiday season, why  not Desert with a Purpose? Not that anyone needs a reason to enjoy those tempting treats, but it is much more enjoyable knowing you are enjoying a tasty treat with lots of health benefits. By they way your hubby and kids dont need to know this is healthy, they will eat it up and you get the satisfaction knowing they are feeding their body with important nutrients to maintain their health and immunity through out the winter season. First take a look at the four main ingredients and the plethora of benefits this desert has. May I add that this desert can be whipped together in 3-5 minutes!! Allow to set over night and you have an incredibly healthy tasty treat. Hey you can even let the kids enjoy as a breakfast treat, it way healthier than commercial brand cereals!!

Pumpkins are loaded with vitamin A and fiber. Vitamin A is  is key for good vision, a healthy immune system, and cell growth

Coconut milk has many health benefits as it is a rich source of potassium, manganese, folate, calcium and selenium

Maintaining a diet high in plant-based foods has also been shown to support a healthycomplexion, increased energy, and overall lower weight.  Magnesium helps keep  blood pressure normal, bones strong, and the  heart rhythm steady. Selenium is an essential trace mineral important for cognitive function, a healthy immune system and fertility for both men and women. Health Benefits of Potassium. The health benefits of potassium include relief from stroke, blood pressure, heart and kidney disorders, anxiety and stress, as well as enhanced muscle strength, metabolism, water balance, electrolytic functions, and nervous system. Folate, early in pregnancy also reduces the risk of other health problems in the fetus, such as brain tumors, cardiovascular problems, poor nerve development, and limb deformities. It also seems to prevent cancer of the cervix.

Chia seeds are packed full of important nutrients – they are an excellent source of omega-3 fatty acids. Chia Buddin with Pumpkin

Buddin:
1/2cup(s), Organic Chia Seeds
13.5 oz(s),Coconut milk, canned
1/2 cup(s), Raw Organic Young Thai Coconut Water 2.00 tsp(s), Vanilla Extract
1/2 tsp(s), Sea Salt
2 tbsp(s), Coconut Sugar, Organic

Pumpkin topping:
1 container (1 4/5 cup (122g) ea.), 100% Pure Pumpkin (Vir) 2 tbsp(s), Coconut Sugar, Organic
1 tsp(s), Spices – Nutmeg, ground
1 tsp(s), Spices – Cinnamon, ground
1 tsp(s), Spices – Ginger, ground

INSTRUCTIONS
1. In a small bowl chia seeds, coconut milk, coconut water, vanilla and salt and mix until very well combined.
2. In separate bowl throughly mix all ingredients for pumpkin topping, refrigerate
3. Place in the refrigerator and allow to rest for at least 2 hours

Divide into 6 desert cups, Buddin, top with scoop of pumpkin and sprinkle with honey toasted walnuts or pecans— see recipe below

Honey Glazed Nuts
1 cup pecans or walnuts 1 tablespoon honey
1 teaspoon cinnamon

Drizzle with honey, bake at 375 degrees for 7 minutes, stir sprinkle ground cinnamon and continue to bake for 7 minutes. Remove and immediately spread on parchment paper allow to cool.
